Our garden feast was a hit. Kids enjoyed trying salad and pesto pizza. If you want to try it at home here is the loose recipes we used, Simple Salad -lettuce leaves of your liking Dill Dressing -1/3 plain Greek yogurt -2 or 3 teaspoons of lemon juice (add more for a thinner consistency) -1 teaspoon sugar -1/8 teaspoon salt and pepper - a hand full of fresh dill Combine in a jar. Add lid and shake. Taste. Drizzle over lettuce. Pesto Pizza -Save on Foods or Superstore do great pizza crust. You can find it in the bread section. I used this as the base. Pesto -cup of basil (no need to be exact) -3 tablespoons of nuts/seeds (at school we use pumpkin seeds for those with nut allergies, but you can use pinenuts, cashews, almonds etc- all are super yummy. ) -1/3 cup parmesan (or asiago) -salt, pepper -1/3 cup olive oil Throw it all in a food processor (I use a magic bullet) and whiz. This recipe does not require precision. Add as much oil as needed to make a nice sauce. If you like garlic add some in. Taste as you are mixing. Add sauce to base. Add some mozzarella cheese. Cook at 350 until golden brown (about 10 minutes). |
